The Best Macaroni Salad!

Hey All!What is worse then having an upset stomach and all that goes along with it??? Answer? Not being at home to take care of the "all that goes along with it" part...

I woke up this morning bright and early at 4:10am to head to the gym. I walked, jogged and ran on the treadmill,did 10 minutes on the rowing machine, moved to the stair climber and then did some weight machines. The entire time, my stomach continued to make very unhappy noises.I have not been feeling up to par the last 3 days. I am chalking it up to a bug, however I had to leave the gym in a hurry as I felt so sick. Not good.

On a different note, I thought I would share one of my favorite summer time recipes. It is great anytime of year, however I find in the summer, whenever we attend a BBQ at someones house, or have a BBQ with people over at our house, this is a great make ahead side that goes a long way. Not to mention it is delicious. My Mom always made macaroni salad while I was growing up... I hated it then, now I love it! I took her vague recipe and added a few more veggies.

Now I am going to admit... While I love to cook, I very rarely follow a recipe, write a recipe down or cook something the exact same way twice.

I am more of a, add a little of this, with a little of this kind of gal. If it was awesome, I make a mental note of what I added and follow the same guidelines the next time. THAT being said, I am going to give you my vague recipe.

Ingredients

Macaroni- I usually use 3/4- the whole bag as I make a big batch for a group of people
Mayonnaise- The real stuff- Hellmans is great
Dijon mustard
Fresh herbs- whatever you have on hand- I usually add parsley and chives
3/4 of a red bell pepper
3/4 of a green bell pepper
3/4 of a yellow bell pepper
1 whole Orange bell pepper (mostly because these are my favorite)
About 4 grated carrots
About 10-15 grated radishes- depending on the size
3-4 stalks of celery
A handful of green onions

So, the great thing about this, is you cook the macaroni, drain it and let it cool. I usually drizzle with olive oil so it doesn't stick together and put it in the fridge while I chop and grate the large amount of veggies that have to go in this salad.


Once you chop and grate all the veggies you should have something pretty like this.

Pretty isn't it? And hey, you have to feel good about eating all of those veggies! I usually add a little bit of salt and pepper to this mix and then go ahead and mix it all in with the macaroni, mayo- enough that it looks good and coated, followed by a healthy squeeze of Dijon... This is kind of the secret ingredient. It gives the salad some zip, some pop and some yummy factor! Stir all of that around (make sure you have a great big bowl) and you should then have something that looks a little like this!

Gorgeous huh!!! Letting it sit overnight lets all the flavors mix together. Before you head to that BBQ, give it a taste test. Sometimes after sitting, it absorbs some of the mayo. You may need to add a couple spoons extra to make it smooth. Top the bowl with a pretty piece of cut parsley just to make it look pretty!
